As I said in an earlier post we did a Kentucky Derby themed cooking club complete with southern food and drinks. The ladies went all out and dressed in our derby best.
The evening began with mint juleps (gross) and sweet tea. I think Jeff was the only one to really enjoy his julep. The sweet tea was great though and will be made all summer long at this house.
Both were so good. We tried a dairy free version of the grits and it didn't have a whole lot of flavor without the cheese. But dairy full it was delicious!
Since this was Kentucky Derby themed there had to be some betting and horse racing.
Entrée - Filet Brennan with Collard Greens, Grilled Tomatoes, and Bacon Wrapped Corn on the Cob
The filet was grilled and served with a mushroom red wine sauce. It was melt in your mouth good. The collard greens also turned out really well. Although how could they not when you cook them in ham stock and bacon grease? The corn wasn't as great. It was grilled with the husks on so then the bacon didn't cook at all. In order to crisp the bacon up, they put it right on the grill and then all the bacon fell off. It was a bit of a mess.
Dessert - Mini Chocolate Souffles
OMG good. Might be our best dessert ever. Gluten and dairy free with only substituting the butter. I could eat these regularly.
Another successful night!
